Team Pizza Snake!

All of a sudden I have found myself an Odyssey of the Mind coach & I LOVE IT! I've spent the last 3 months learning as we go & we have had a blast.

We had to reschedule our Christmas party because of a snow day back in December, so we kicked off 2016 with a Christmas party. I searched & searched for team building recipes & couldn't find anything that I wanted to do with 7 4th graders. Then I thought about cooking with my own kids & what we have enjoyed. I pulled up our pizza snake from years ago & adapted it for a team building activity.

This was an after school snack so we just made 2 between the 7 students. Also, to make it "team building," they could only use 1 hand. So they had to work together to pop open the can of dough etc. (disclaimer: I did jump in a time or 2 to save it & used both hands!) TOOOO FUN!

Ingredients: 

  • 2 tubes (11 ounces) refrigerated pizza crust (thick)
  • Pizza sauce (just a store bought jar)
  • 1 bag (12 ounces) Italian 5 cheese
  • 1 bag of pepperonis
  • 1 egg white, lightly beaten with a splash of water

Basic instructions:

  • Roll out the dough
  • Top with sauce, cheese & your choice of toppings
  • Roll, the long end tightly. By this, I mean that it's a rectangle, so don't roll the short side, roll the long side. It's a long snake! :)
  • Shape into an S.
  • Bake at 425º for 15-18 minutes

Add Olives for eyes & cut a pepperoni into a tongue.Brush it with an egg wash (egg whites & water). This makes him shiny & dark. Serve with dip cups of sauce & gasp as the sauce & cheese ooze out of the snakes body! Ew! LOL...

**Next we're going to try a taco pizza snake & put him in a bed of (lettuce) grass! I'll add pics or a new post. We shall see!

Momma's Donuts!

This week I ordered a donut pan on amazon & have been trying out donut recipes. That's not the worst thing in the world, right? Well, I've honed in on a recipe worth sharing. We're going nuts over this one. I have adapted our most favorite waffle recipe into a donut. (That will also become your go-to waffle recipe. Save that!)

IMG_7927-2Bottom line - LOTS of butter & folded in beaten egg whites for airy-ness. I'm thinking, "this should TOTALLY work as a donut." BAM! IT DOES!

Ingredients: 1 1/3 cups flour 4 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons honey 2 eggs, separated 1/2 cup butter, melted 1 3/4 cups milk

INSTRUCTIONS:

In a large mixing bowl, whisk together all dry ingredients. IMG_7928-2

Melt the butter & honey together (this is my friend Kylie's INCREDIBLE honey!) I took this trick from Alton Brown's instant pancake recipe. I always go for melting local honey in good butter instead of using sugar & oil.

Separate the eggs, adding the yolks to the butter & honey mixture, placing the whites in a small mixing bowl.

Beat whites until moderately stiff & set aside.

Add milk & butter mixture to dry ingredient mixture and blend.

Fold stiff egg whites into mixture.

Ladle mixture into a baggie & pipe it into the donut pan..

Bake for 7-9 minutes at 425. Cool on a rack, frost & decorate. Eat. Enjoy. Share with friends.

Taco Pie!

IMG_6345 INGREDIENTS:

1 lb ground beef, seasoned for tacos 2 cans of Crescent Rolls Shredded Cheese Lettuce Tomatoes Salsa Sour Cream

DIRECTIONS: Brown the ground beef & season it for tacos.(I use my own chile powder, cumin, coriander, salt, pepper, shake of soy sauce)

Lay the crescent rolls in the pie plate, fat side in with the triangles coming off the sides

Spoon the beef into a ring...

Fold the ends into the center & press down..

IMG_6343Cook at 375 for 15-18 minutes, until golden brown.

Fill the center with your favorite, fresh & crunchy toppings. (Shredded iceberg lettuce, tomatoes & cheese)
